Eight years of development and more than a thousand dealcoholized wines have taught us one thing: in the end, taste decides, not the number on the label.
So does good wine have to be 0 or 12%? Or is it allowed to be something in between?
One Sauvignon Blanc, 2025. Same harvest, same cellar, same wine. After that the paths split: one stays exactly as it grew, at 12% ABV. From the second we take out half the alcohol. From the third, all of it.
