We dealcoholise fine wines.

That's one step more in the process, not one less. A good alcohol-free wine begins with a good wine.

We go where the terroir has its heritage

We work with some of the finest oenologists and organic winemakers in Europe. We choose carefully estates that know their specialty. Our Rosé comes from France, our Verdejo from Spain. German wines we grow ourselves. For the Icon line, we form particular partnerships, such as with Schloss Johannisberg, the oldest Riesling estate in the world.

Built for its purpose from growing the grapes

Most alcohol-free wines are made backwards: finished wine, alcohol out. We think from the end. Every wine we work with is built for its purpose from the grape onwards.

Already well before the harvest we decide how a wine should be made, with which aromatics, which structure, which ripeness it should enter the process. Because dealcoholisation changes a wine. Knowing that, you build the base wine differently.

Eight years, over a thousand dealcoholised wines: from that, we know rather precisely which starting wine will work in the end.

An exceptional process that builds the character of our wine

We remove the alcohol gently, in several stages. At low temperatures, with different methods depending on the wine. The aromas that escape along the way, we capture and return.

No artificial aromas, no colouring. What makes the character comes from the wine itself. Our research lab is in Berlin. Here we taste, blend and select and find out which wine has what it takes for Kolonne Null.
